Provesol ES 60 is a 100% soluble soy extract developed for use in the manufacture of ice cream instead of animal milk. The presenceof the soy protein makes the obtained ice cream have a greater Overrun (greater aeration capacity of the ice cream mass) also greater resistance to melting.
